接頭辞のsur- には「上に」という意味があり、そこからsurfaceは「上の面」→「表面、外見」となります。
surface of …は「〜の表面」なので、surface of the glass「グラスの表面」、surface of a lake「湖面」、surface of the sea「海面」、surface of contact「接触面」などとなります。
The surface of this material is fragile, so be careful.
この素材の表面は傷つきやすいので注意してください。

…’s surface も同様に「〜の表面」で、 earth’s surfaceは「地表」、moon’s surfaceは「月面」という意味です。
また〈形容詞＋surface〉で表面の形状を表し、curved surface「曲面」、plane surface「平面」、smooth surface「滑らかな面」、rough surface「粗面」などの表現があります。
on the surface of …は「〜の表面に」という意味なので、on the plane surface of …は「〜の平面に」を表します。このように、surfaceの前に形容詞を組み合わせることで、「さまざまな（形状の）物の上」を表すことができます。
